From the brush to the sprayer
For as long as people have baked, they have needed coating tools — a way to put a coating on food. A wash to give a loaf its colour, a glaze to give a pastry its shine, a film of oil so nothing sticks to the tray. For most of that history the tool was the brush. It still has its place, but the way professional kitchens work has changed, and many are now looking for a pastry brush alternative that keeps pace.
The brush, and where it falls short
The brush is cheap, simple and gives a feeling of control, which is why it lasted so long. In a small kitchen making a few dozen items a day it is fine. The trouble starts with volume and with standards. A brush holds a lot of liquid and lays it down unevenly, so one croissant gets more than the next. It leaves streaks, and it sheds the odd bristle into the food. It soaks up material and wastes it. Doing it by hand, tray after tray through a shift, is slow and hard on the wrists and back. As bakeries grew, from the single artisan bakery to the in store supermarket bakery, the hotel, the cruise ship and the chain, the brush could no longer keep up with the volume or hold the consistency that a brand now expects on every item.
The aerosol can, a step forward with its own costs
The spray can was the first attempt to work faster. Point and spray, no brushing. It solved the speed problem for a while, but it brought problems of its own. The cost per use is high, because you are paying for a single use can and the propellant inside it. It oversprays and pools when held close, so the finish is not always even. It uses propellant gases, and it needs storing and disposing of. Each can holds one material, so a kitchen running oil, egg wash and glaze needs several. For a busy operation the running cost adds up quickly, and there is a growing wish to move away from single use cans on both cost and waste.
The electric food sprayer
The electric food sprayer answers the same need, faster application and an even finish, but without the cost and the waste of the can. It works with a piston that moves back and forth around 120 times a second, which draws the liquid in and pushes it out as a fine mist. There is no compressor and no air line, so it is quick to set up and easy to move between jobs. It coats a tray in seconds with a thin, even layer, which gives a cleaner and more repeatable result and uses less material for the same coverage. One sprayer takes many materials, so you change the container and carry on rather than reaching for another can. In a bakery replacing two spray cans a day, the sprayer often pays for itself in three to four weeks.
Why the build matters
There is an easy mistake here, which is to reach for a cheap paint or utility sprayer and point it at food. It sprays, but it was never made for food contact, and under real use it can pass lead, nickel and plastic compounds into what you spray. A professional food sprayer is a different thing. The parts that touch the food are food grade, the piston and bush are machined so finely that no seal is needed, the nozzle uses an industrial ruby so the pattern holds under pressure, and every unit is tested before it leaves the factory.
Where it goes next
The direction has always been the same, towards faster, cleaner and more consistent, with less effort. The next step is a tool that is cordless and that sets itself to the material. Our engineering team is in advanced development on a battery powered sprayer with intelligent viscosity and power management. The earliest realistic release is Q4 2026, and more likely early 2027. The brush is where this started, and it will always have a place for fine hand work. But for a bakery working at volume, to a standard, the sprayer is how the job gets done now.
