Tempering, what it really is and where it goes wrong.
Most people who work with chocolate know the routine and the result they are after. Fewer know exactly what is happening inside the chocolate, or why it fails. Tempering is not about getting chocolate hot, it is about controlling how the cocoa butter crystallises as it sets. Get that right and you get gloss, snap and shelf life. Get it wrong and the same chocolate turns soft, dull or streaky. This is a working guide to what tempering is, and the handful of mistakes that cause almost every bad batch.
What tempering actually controls
Cocoa butter can set into six different crystal forms, numbered I to VI, each with different properties. Only one of them, Form V, also called Beta-5 or βV, gives the result a professional wants. Tempering is simply the process of guiding as much of the cocoa butter as possible into that one stable form, and keeping it there while you work.
Why Beta-5 is the target
- A smooth, stable texture, with no graininess
- A glossy surface
- A clean, firm snap
- A longer shelf life, with far less risk of bloom, the grey streaks and patches
- It melts at body temperature, which is what gives the right mouthfeel
The unwanted forms, Alpha (α), Gamma (γ) and Beta-6 (βVI), are what you find in badly tempered chocolate. They leave it soft, unstable or bloomed. Beta-6 is the one to watch, because it often is not visible when you finish. Weeks later the chocolate develops a grey fat or sugar bloom, loses its shine and tastes flatter.
The process, in plain terms
For chocolate that is not already tempered, the job has three stages, then a fourth that never really ends.
- Melt. Heat the chocolate enough to dissolve every existing crystal, stable and unstable alike, so you start from a clean slate.
- Seed and cool. Bring the temperature down and introduce stable crystals, usually by stirring in a little pre-tempered chocolate. This “seeds” the batch so Beta-5 forms, and it is why the stir speed and timing matter.
- Reheat to working temperature. Warm it gently back to the temperature you cast, dip or coat at.
- Hold it. Keep it in that narrow working window. Drift too warm and the temper is lost. Let it over-crystallise and it thickens and sets in the bowl. Either way, you start the whole process again.
The exact temperatures differ by type, because the recipe differs. White chocolate is mostly cocoa butter and sugar, milk chocolate adds milk solids, and dark chocolate carries more cocoa and less fat and sugar. Follow the maker’s figures, they vary from one brand to the next. If your chocolate is already tempered, you skip the high melt and the seeding entirely, and only warm it gently to working temperature, which is exactly where the most common mistake happens.
Where it goes wrong, the common mistakes
1. Overheating
Take the chocolate much above about 34°C and the stable Beta-5 crystals are destroyed. On the way back down you get an incomplete temper, a rough or matt surface, and a much higher chance of Beta-6 bloom appearing later. The catch is that the heat source lags behind the chocolate, so the chocolate keeps climbing past your target after you think you have stopped. This is why slow, gentle heating matters, and why it matters most with chocolate that is already tempered, there is no melt-and-reseed stage to rescue you.
2. Moisture
Water is the enemy of temper. Condensation, high humidity, a bowl that is not fully dry, or steam off a bain-marie can all trigger sugar bloom and disturb crystallisation. Water-based and microwave melting are common culprits, because both can introduce moisture into the chocolate without you seeing it.
3. Temperature swings
Repeatedly drifting in and out of the working window destabilises the Beta-5 crystals and lets Beta-6 form over time. A steady temperature is what you want.
4. Stirring, too much or too little
Stirring is part of seeding, it helps Beta-5 develop. But stir too fast or too long and you over-crystallise, the chocolate turns thick and stiff. Stir too slowly and unwanted crystal forms build up in pockets that never got moving. There is a right speed and frequency, and it changes with the batch size and the type.
5. Passive cooling on bigger batches
By hand, cooling is usually passive, you let the air do it near room temperature. That is fine for a few hundred grams. Past roughly 500 g it simply cannot pull the chocolate down to the ~26°C the process needs, so you never properly reach or hold Beta-5. Hand tempering does not scale, which is why small producers struggle to stay consistent.
Why the equipment matters
Every one of those mistakes comes back to control, of temperature, of moisture, and of the crystal state you cannot see. That is why the melting step is worth doing properly.
